Патока рафинадная представляет собой густую, вязкую массу темно-коричневого цвета.Она имеет сладкий вкус с горько-солоноватым привкусом, а кроме того специфический запах. Рафинадная патока используется как краситель, ароматизатор или заменитель сахара в процессе изготовления кулинарных изделий, овсяного печенья, различных сортов ржаного хлеба, соусов. К примеру, при выпечке бородинского, орловского, минского и других сортов ржаного хлеба рафинадная патока ускоряет процессы брожения теста, улучшает вкус и аромат хлеба, не дает ему быстро черстветь. Она придает легкую горчинку и особый вкус любым хлебобулочным изделиям. В ее состав входит вода, сахар, глюкоза, фруктоза и рафиноза, а также азотистые соединения, которые являются необходимым условием для бурной деятельности дрожжей.
