Глюкозный сироп 43 используется в кондитерской промышленности при изготовлении карамели, сахарной помадки, мороженого, жевательной резинки и т.п. Придаёт эластичность и блеск изделиям, помогает удерживать влагу, придает пластичность и вязкость, обладает консервирующими свойствами. Характеризуется пониженной сладостью — 44% по отношению к сахарозе.
В природе основной источник глюкозы – это фрукты и мед. Глюкозный сироп для кондитерских изделий готовят из кукурузы, а некоторые производители используют для этого картофельный крахмал.
